Whisk 4 c. hot butternut squash soup and 2/3 c. grated Parmesan cheese; toss with 1 lb. cooked rigatoni and 6 strips cooked bacon, chopped. Serves 4
2. Squash Cornbread
Prepare and bake 1 box cornbread mix as label directs, replacing liquid with equal amount butternut squash soup. Serves 8
3. Spicy Veggie Chili
Simmer 4 c. butternut squash soup; 1 (15-oz) can each black beans and red beans, drained and rinsed; 2 Tbsp. lime juice; 1 Tbsp. chopped chipotles in adobo; and 1/4 tsp. salt. Top with shredded Cheddar and sliced green onion. Serves 4
4. Instant Curry Dinner
Simmer 4 c. butternut squash soup, 1 (1-lb) bag frozen mixed vegetables (peas, carrots, corn, and green beans), and 1 Tbsp. curry powder 3 to 5 min. or until heated through. Serve over 2 c. cooked basmati rice. Serves 4
5. Squash Mashed Potatoes
Bring 4 med. Yukon gold potatoes (peeled and cubed) and 6 c. water to boiling. Simmer 15 min. or until tender. Drain. Mash with 4 Tbsp. butter, 1 c. butternut squash soup, and 1/2 tsp. salt. Serves 4
