Why Broiling Makes Great Salmon

Of all the methods we can use for cooking salmon, broiling has to be close to the top. I’m not going to lie; grilling is still my passion. However, time and the weather sometimes get in the way. Broiling to the rescue!

Broiling uses radiant high heat directly above the food. That creates a textured crust similar to grilling. And since the heat is so high, it really speeds up the cooking time.

Recipe Ingredients

  1. Salmon Fillets– Fresh or frozen salmon works great for this recipe. And don’t feel bad if you don’t have salmon because any firm-fleshed fish tastes fantastic with this recipe.
  2. Mustard Sauce– Garlic, thyme, rosemary, mustard, lemon juice, and salt and pepper to taste kick up this broiled salmon more than a notch. But if you have another favorite sauce, feel free to use it instead.

  • Make the Mustard Sauce– In a large saucepan, melt the butter, add oil and garlic, and sauté for 30 seconds or until fragrant. Then add minced thyme and rosemary, and cook for 30 seconds to a minute. Turn off the heat, add the mustard and lemon juice.(Photos 1-4)
  • Prepare to Broil– Line a heavy-rimmed baking sheet with foil or parchment paper. Use cooking spray to spray the baking sheet. Set aside.
  • Season Salmon– Pat the salmon fillets dry with a paper towel. Season with salt and pepper, then place in a single layer on the baking sheet. Drizzle the butter mustard sauce over the fillets with a spoon. (Photos 5 & 6)
  • Broil– Put the pan 5-6 inches from the broiler (usually the top rack). Broil for 3 minutes, then flip the fillets and baste them with butter sauce. Broil for another 3 minutes. Salmon is ready when it flakes with a fork. (Photos 7 & 8)

Recipe Variations

  1. Seasoning Twist:Salmon’s mild flavor makes it fun to play with different herbs and spices to give it your own jazz. Citrus, especially lemon, goes great. Creole, Italian, curry, and jerk seasonings deliver the ultimate flavor.
  2. Customized Seasonings:Rosemary, thyme, salt, pepper, and garlic provide aromatic goodness. And lemongrass, ginger, and garlic give it a Thai twist.
  3. Air Fryer Salmon Recipe:Making salmon in the air fryer is a breeze. Cooking time is about the same as broiling, and no flipping is needed when you air fry salmon. Spritz the fillets and air fryer basket with olive oil and air fry for 6-10 minutes.
  4. Salmon Steaks:Replace the fillets with steaks and broil them for about 10 minutes or until flakey, flipping halfway through.

Tips and Tricks

  1. Check for doneness with the tip of a paring knife. When the fish flakes easily with a fork, you’re ready.
  2. Put your oven rack about 6 inches from the broiling element for the best use of heat.
  3. Preheat your broiler for about 5 minutes before putting your salmon in the oven.
  4. If your salmon fillets have skin, broil them skin-side down for about 6 minutes, with no flipping.

Make-Ahead Instructions

While broiled salmon is best hot out of the oven, you can definitely prep it the night before. Just season it and refrigerate it in an airtight container for a stress-free dinner.

Serving and Storage Instructions

Serve this deliciousness fresh from the oven with rice or potatoes and a veggie side dish. It’s also great over a Caesar salad.

Refrigerate or freeze leftovers in a sealable, airtight container. Use leftovers in salmon croquettes or replace the tuna in a tuna salad. Salmon lasts in the fridge for 3-4 days and freezer for 2-3 months.

FAQs

Is it better to bake or broil salmon? ›

Broiling in the oven is equivalent to cooking with 500-550℉, and adds more texture (that char!) than baking because of the high heat. Is baking or broiling better for salmon? There's no *best* method for preparing salmon, but we like broiling for the expediency, and the nice crispiness it adds.

How do you know when broiled salmon is done? ›

No radiation needed here. The easiest way to see if your salmon has finished cooking is to gently press down on the top of the fillet with a fork or your finger. If the flesh of the salmon flakes—meaning, it separates easily along the white lines that run across the fillet (strips of fish fat)—it's finished cooking.

What is the very best way to cook salmon? ›

Pan-frying or pan-searing is one of the best ways to cook salmon fillets. It's quick, easy, and gives the fish that perfect crispy, crunchy skin. A simple pan-fried salmon is the secret to a flavorful and healthy weeknight dinner in 30 minutes or less. Season the salmon fillets with salt and pepper.

Do you have to thaw salmon before broiling? ›

Broiled salmon is an easy, quick dish where fresh or frozen and thawed salmon is placed directly under the broiler in the oven and is cooked until it's lightly browned and cooked. You can incorporate many different ingredients into the recipe to add flavor, such as blackening seasonings, a marinade, or sauce.

Do I broil on high or low? ›

If your recipe doesn't specify a temperature, use the highest setting. In general, the high setting is best when broiling thin cuts of meat that you prefer seared in natural juices and less done on their interiors. The low broiler setting is better for thicker cuts of meat that you want cooked all the way through.

What is the white stuff coming out of my salmon? ›

The white stuff that oozes out of salmon is called albumin, a type of protein in the fish (other foods with albumin include eggs, beef and milk). You can't see albumin when the fish is raw—it only appears when the salmon is exposed to heat. As salmon cooks, the albumin turns from its liquid state into a semi-solid one.

How to tell if salmon is done without a thermometer? ›

Firmness: Cooked salmon should be firm but still moist. When you press down gently on the flesh with a fork or your finger, it should feel slightly resistant but still give way easily. If the salmon is still hard or resists your fork, it needs more time to cook. If it is mushy or falls apart, it may be overcooked.

What is the secret to the best salmon? ›

Starting your salmon skin-side down, and cooking it until it is well rendered, lightly browned, and crisp, and then turning the salmon to finish the cooking, will make for a terrific dining experience.

Is it better to broil or pan fry salmon? ›

Unlike broiled salmon, searing the salmon in a skillet means the flesh side gets a nice layer of caramelization to add to the flavor. Just watch out when you flip the salmon. The fillets might cause the oil to splatter, which is where the splatter guard comes in handy.

What is the best way to broil fish? ›

Spray sheet pan lined with foil and both sides of fish with non-stick cooking spray. Season top side of fish with salt and pepper. Place on pan. Broil about 7-8 inches from broiler unit or flames about 5-7 minutes per side, or until fish is opaque when flaked.

Should you broil salmon skin side up? ›

No, there is no need to flip the salmon over for this recipe. Keeping the salmon skin-side down allows the flesh to caramelize and crisp under the broiler.

Is it better to bake or broil fish in the oven? ›

Fish that might otherwise be broiled can be baked at higher temperatures, ranging from 400 F to 450 F. The broiler incinerates fresh herbs and many other garnishes, but oven-baked fish can take full advantage of these light, low-fat flavoring options.

Which is better bake or broil? ›

Broiling focuses all of the heat on the surface of the food—if you're cooking a thicker cut of meat like a chicken breast, you run the risk of browning the outside without cooking the inside through. When cooking thicker cuts of meat or a dense casserole like lasagna, we will first opt for baking.

Which oven setting is best for salmon? ›

At 400°F (C), a piece of salmon takes about 10-15 minutes to bake, or until the temperature reaches 135 degrees at its thickest, most internal part. At 425°F (215°C), you'll want to aim for four to six minutes per half-inch of thickness for the most tender, buttery fillets possible.

How does Gordon Ramsay cook salmon in the oven? ›

Fold the edges of the foil tightly together over the salmon to seal, leaving some space in the parcel for steam to surround and cook the fish. Put the salmon parcel in the roasting tin and cook in the centre of the oven for 25 - 30 minutes, depending on the thickness of the salmon.
