And I suspect that when I post this sauteed frog legs recipe on my social media later today that I will get quite a lot of mixed reactions.

But if there is one thing that I have learned over all the years of food blogging, is that I can’t please anyone.

Some even say that the French were called ‘frogs’ long time ago because they would eat frog legs. A theory that others say is untrue.

But you can also find frog on the menu in other countries of course. China for instance.

And quite a lot of other countries.

So eating frog is not just a French thing.

Even here in Belgium you can find frog legs on the menu.

Although I have to admit that you find it less and less these days.

I bought mine in a big Belgian supermarket for my frog legs recipe.

Have you tried frog legs before?

I often get the question how frog legs taste like.

And I have to admit that frog legs taste like prawns. The texture of their meat reminds me of quail legs too.

So what is not to love about them!

For my frog legs recipe below I went for a very classic version. Plain and simply pan fried in a little oil and garlic butter.

A little sprinkle of pepper, salt and freshly chopped parsley in the end.

Excellent.

Breaded Frog Legs

If you like you can coat the frog legs in a little flour before you pan fry them.

If you are not certain about cooking with garlic butter, then you can use unsalted butter and a little mashed garlic instead.

Some sever the frog legs and pan fry them separately. I kept them in one piece. It is up to you!

Ingredients

  • 10,5 oz frog legs (300 g), fresh or thawed
  • 3 cups milk or water (optional)
  • 1 tbsp olive oil
  • 2 tbsp garlic butter
  • 1 tbsp fresh parsley chopped
  • pepper
  • salt

Instructions

  1. 1. Let the frog legs soak in the milk in the fridge for an hour (optional).

  2. 2. Rinse the legs and pat them dry with kitchen paper.

  3. 3. Add the olive oil and half of the garlic butter to a large wok or frying pan. Place it over high heat until the butter starts to foam. Don't let it burn.

  4. 4. Add the frog legs to the pan. Pan fry them for about 10 minutes until they are golden brown on both sides. Turn the over regularly.

  5. 5. Add the rest of the garlic butter right in the end together with the freshly chopped parsley. Season with a pinch of pepper and salt to taste.

  6. 6. Divide the frog legs over plates. Serve with grilled bread and a green salad.

Do I have to soak frog legs in milk?

You might have noticed in my frog legs recipe above that I soak the legs first.

Why?

I am not sure if there is any real proof to back it up, but apparently the milk makes the frog meat swell and therefore meatier. It also gives the meat a whiter color I think. And it is like soaking marrow bones: the milk extracts impurities such as blood and other body fluids.

Sure!

I only use milk because my grandmother used to do that as well.

What happens if you don’t let the frog legs soak beforehand?

Nothing, don’t worry. You will not get sick. If you forget to do it or in case you just run out of time, you can still perfectly cook them. Rinse the frog legs, pat them dry with a little kitchen paper and pan fry them.
