Ingredients needed to make this ‘snickers’ chocolate bark

Medjool dates: use sweet medjool dates that are pitted and sliced open to create a caramel-like layer; their natural sweetness is the best for date crunch bark recipe.

Chopped peanuts: raw / unsalted chopped peanuts help create a crunchy layer just like in a snickers bar; alternatively you could use crushed peanuts.

Natural peanut butter: I like to use natural, creamy peanut butter because it’s much easier to drizzle and spread over the dates.

Chocolate chips: melted dark chocolate chips are my favourite to use but you can use any chocolate chips you have on hand like semi-sweet or milk chocolate chips.

Coconut oil: coconut oil helps to make the melted chocolate chips very pourable once it’s melted.

Salt (optional): flaky sea salt adds the saltiness for the perfect salty-sweet flavors of this sweet treat but it an entirely optional 6th ingredient.

How to make this snickers date bark recipe

Step 1: Layer a baking sheet with parchment paper. Layer the pitted and sliced dates in a single layer, putting the dates close to eachother, overlapping slightly. Layer another piece of parchment paper over top of the dates and use a glass to press / smash down the dates to create a single, thinner layer. Remove the parchment paper.

Step 2: Melt the chocolate and coconut oil in a microwave-safe bowl in 20 second increments in the microwave, stirring after each 20 seconds until melted.

Step 3: Drizzle the peanut butter over the flattened dates and then sprinkle the chopped peanuts over top of the peanut butter. Finally pour the melted chocolate over the date-peanut layers and if needed use the back of a spoon to gently spread the chocolate to make sure all of the edges are covered. Add a sprinkle of sea salt if desired.

Step 4: Refrigerate for at least 1 hour or freeze for at least 30 minutes to set. Use a sharp knife to slice into pieces or break into pieces and enjoy!
